This quick “special occasion” dish comes together in minutes because the small-dice potatoes and shrimp cook quickly.

1 stick (1/2 cup) butter
2 medium potatoes, peeled, diced
2 pounds small shrimp, peeled, deveined
2 cloves garlic, finely chopped
1/2 cup button mushrooms
1/2 cup fresh or frozen small peas
1/4 teaspoon chopped fresh parsley
1/3 cup white wine
1/2 teaspoon salt
Freshly ground pepper

Melt butter in a 2 quart saucepan over medium heat. Add potatoes. Cook stirring, until potatoes begin to soften, about 5 minutes. Add shirmp, garlic and mushrooms. Cook, stirring until shrimp are pink and tender about 5 minutes. Stir in peas, parsley and wine. Add salt and pepper to taste. Cook, stirring occasionally, until flavors come together, about 5 minutes. Makes 4 servings.
